    • 200ml whole milk (or milk of choice)
    • 2 large eggs
    • 45g melted butter or neutral oil

    • 5g fine sea salt
    • 3g baking soda (optional, for extra lift)
    • Butter or cooking spray for the waffle iron

    Instructions

    Step 1

    Use active, recently fed sourdough starter at or just past peak rise for maximum lift and flavor. If your starter is cold, let it sit at room temperature for 30 minutes to ensure it's at optimal fermentation stage.

    Step 2

    In a large mixing bowl, whisk together the active sourdough starter, milk, eggs, melted butter, and sugar until fully combined. The mixture should be smooth with no lumps of starter remaining.

    In a separate bowl, whisk together flour, salt, and baking soda (if using). Sifting these ingredients helps distribute them evenly and prevents lumps in the final batter.

    Pour the dry ingredients into the wet mixture and stir gently with a spatula or wooden spoon until just combined. The batter should have small lumps—do not overmix, as this develops gluten and creates tough waffles.

    Step 5

    Allow the batter to rest for 15 minutes at room temperature. This fermentation period allows the sourdough culture to activate, creating lift and deepening the tangy flavor without requiring additional leavening agents.

    While the batter rests, preheat your waffle iron to medium-high heat (around 375–400°F if your iron has temperature settings). A properly heated iron is critical for achieving the crispy exterior that defines great waffles.
