    Ingredients

    • 150g active sourdough starter (fed and bubbly)
    • 350g all-purpose flour (plus more for dusting)
    • 175ml warm whole milk (100-110°F / 38-43°C)
    • 40g granulated sugar
    • 7g fine sea salt
    • 60g unsalted butter, melted and cooled
    • 1 large egg, room temperature
    • 1 tablespoon unsalted butter, melted (for brushing)

    Instructions

    Step 1

    In a large bowl, whisk together the warm milk, granulated sugar, and active sourdough starter until well combined.

    Step 2

    Add the room temperature egg and the cooled melted butter to the mixture, stirring until fully incorporated.

    Step 3

    In a separate bowl, combine the all-purpose flour and fine sea salt, then gradually add the dry ingredients to the wet mixture.

    Mix with a spoon or your hands until a shaggy dough forms, then turn it out onto a lightly floured surface or into a stand mixer.

    Knead the dough for 8-10 minutes until it becomes smooth, elastic, and passes the windowpane test.
