    Ingredients

    • 200g active sourdough starter (fed and bubbly, or unfed discard)
    • 240g all-purpose flour
    • 50g granulated sugar
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon baking soda
    • 1/4 teaspoon salt
    • 1 large egg
    • 60ml milk (any kind, whole or plant-based works well)
    • 60ml melted unsalted butter
    • 1 teaspoon vanilla extract
    • 1 large apple, peeled, cored, and diced (about 1 cup, e.g., Honeycrisp or Granny Smith)
    • Optional topping: 2 tablespoons brown sugar
    • Optional topping: 1 tablespoon melted butter

    Instructions

    Step 1

Preheat your oven to 350°F (175°C). Grease and lightly flour a 9x5 inch loaf pan, ensuring full coverage to prevent sticking.

    Step 2

In a large mixing bowl, whisk together the active sourdough starter, egg, milk, melted butter, and vanilla extract until they are thoroughly combined and smooth.

    Step 3

In a separate medium bowl, combine the all-purpose flour, granulated sugar, ground cinnamon, baking soda, and salt, whisking them well to distribute evenly.

    Step 4

Gradually add the dry ingredients into the wet ingredients, mixing gently with a spatula or wooden spoon until just combined. Be careful not to overmix the batter, as this can lead to a tough loaf.

    Step 5

Gently fold in the diced apples until they are evenly distributed throughout the batter.

    Step 6

Pour the prepared batter into your greased loaf pan, spreading it evenly with the back of a spoon or spatula.

    Step 7

For an optional sweet topping, drizzle 1 tablespoon of melted butter evenly over the batter, then sprinkle with 2 tablespoons of brown sugar.

    Step 8

Bake for 45-55 minutes, or until a wooden skewer or toothpick inserted into the center of the loaf comes out clean.

    Step 9

Allow the loaf to cool in the pan for about 10 minutes before carefully transferring it to a wire rack to cool completely.

    Step 10

Once fully cooled, slice and serve your delicious sourdough apple cinnamon loaf warm or at room temperature.
