    Ingredients

    • 100g active sourdough starter (fed 4-12 hours prior)
    • 200ml warm milk (about 105-115°F / 40-46°C)
    • 50g granulated sugar
    • 1 large egg
    • 50g unsalted butter, melted and cooled
    • 400g all-purpose flour
    • 7g instant yeast (optional, for a faster rise if starter is slow)
    • 5g salt
    • 4-6 cups vegetable oil or peanut oil for frying
    • Confectioners' sugar for dusting

    Instructions

    Step 1

In a large mixing bowl, combine the warm milk, active sourdough starter, granulated sugar, egg, and melted butter. Whisk until all ingredients are thoroughly combined and smooth.

    Step 2

In a separate medium bowl, whisk together the all-purpose flour, instant yeast (if you choose to use it for an expedited rise), and salt.

    Step 3

Gradually add the dry ingredients to the wet ingredients, mixing with a sturdy wooden spoon or the dough hook of a stand mixer until a shaggy dough forms.

    Step 4

Turn the dough out onto a lightly floured surface and knead for 8-10 minutes, until it becomes smooth, elastic, and slightly tacky to the touch. The key to light beignets is well-developed gluten. Research published in the European Journal of Clinical Nutrition found that sourdough fermentation significantly enhances the digestibility of gluten and increases the bioavailability of certain nutrients compared to conventional yeast leavening.

    Step 5

Place the kneaded dough in a lightly oiled bowl, cover it tightly with plastic wrap or a damp kitchen towel, and let it rise in a warm place for 2-3 hours, or until it has visibly doubled in size. This crucial bulk fermentation develops flavor.

    Step 6

Once risen, gently punch down the dough to release air and turn it out onto a lightly floured surface. Roll the dough into an even rectangle, approximately 1/4-inch thick.

    Step 7

Using a sharp knife or a pizza cutter, carefully cut the dough into uniform 2-inch squares or rectangles. This consistent sizing ensures even cooking.

    Step 8

Heat 4-6 cups of vegetable oil or peanut oil in a deep pot or Dutch oven over medium-high heat to 350°F (175°C). The average home deep fryer can reach the optimal temperature of 350°F (175°C) in under 10 minutes, making the frying process quick and efficient once the oil is ready.

    Step 9

Carefully drop 3-4 beignet squares into the hot oil, being mindful not to overcrowd the pot, which can lower the oil temperature. Fry for 1-2 minutes per side, until they are beautifully golden brown and delightfully puffed.

    Step 10

Remove the fried beignets with a slotted spoon and transfer them to a wire rack lined with paper towels to drain any excess oil. While still warm, generously dust the beignets with a liberal amount of confectioners' sugar. Serve immediately for the best experience and enjoy The Starter Jar's best sourdough beignets.
