In a large mixing bowl, combine the active sourdough starter and warm water. Whisk gently until the starter is mostly dissolved and integrated with the water.
Add the bread flour and fine sea salt to the bowl. Mix with a sturdy spatula or your hand until all the flour is hydrated and a shaggy, cohesive dough forms. Avoid overmixing or kneading.
Cover the bowl with a damp kitchen towel or plastic wrap. Let the dough bulk ferment at room temperature (ideally 70-75°F / 21-24°C) for 8-12 hours, or until it has visibly doubled in size and shows bubbles.
Lightly flour your work surface. Gently scrape the fermented dough out of the bowl onto the floured surface, being careful not to degas it excessively.
Perform a simple series of folds to create tension: gently stretch one edge of the dough up and fold it over to the center, then repeat with the remaining three sides, forming a rough ball. Flip the dough seam-side down to create surface tension.
Prepare a floured banneton or a bowl lined with a floured tea towel. Carefully transfer the dough, seam-side up, into the prepared banneton/bowl.
Cover the dough and refrigerate for at least 12 hours, and up to 24 hours, for the cold proof. This step significantly enhances flavor and makes the dough easier to handle.
Preheat your oven to 450°F (232°C) with a Dutch oven inside for at least 30 minutes. This ensures the Dutch oven is thoroughly heated for optimal oven spring.
Carefully remove the hot Dutch oven from the oven. Gently invert the cold dough into the hot Dutch oven. Score the top of the dough with a sharp knife or razor blade to guide expansion.
Cover the Dutch oven with its lid and bake for 30 minutes. The steam trapped inside creates a beautiful, crispy crust.
Remove the lid and continue baking for another 15-20 minutes, or until the crust is a deep golden brown and the internal temperature reaches 200-210°F (93-99°C).
Carefully remove the baked bread from the Dutch oven and transfer it to a wire rack to cool completely for at least 1-2 hours before slicing. Cooling is essential for the crumb structure and flavor to set properly.
