    • 1 teaspoon granulated sugar
    • 1/2 teaspoon fine sea salt
    • 170g unsalted butter, very cold, cut into 1/2-inch cubes
    • 60g active sourdough starter or unfed discard, chilled
    • 60-80ml ice water

    Instructions

    Step 1

    In a large bowl, whisk together the all-purpose flour, granulated sugar, and fine sea salt until well combined. Ensure these dry ingredients are evenly distributed for consistent flavor.

    Step 2

    Add the very cold butter cubes to the dry ingredients. Use a pastry blender, your fingertips, or a food processor to cut the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.

    Step 3

    In a separate small bowl, whisk together the chilled sourdough starter (or discard) and 60ml of ice water. This ensures the starter is evenly distributed before adding to the dough.

    Pour the sourdough-water mixture over the flour and butter mixture. Use a fork to gently mix until the dough just starts to come together, adding more ice water, one tablespoon at a time, if needed, until a shaggy dough forms.

    Turn the shaggy dough out onto a lightly floured surface. Gently gather and press the dough together a few times, forming it into two equal discs without overworking.

    Wrap each dough disc tightly in plastic wrap and refrigerate for at least 2 hours, or preferably overnight. This chilling period is crucial for hydrating the flour and firming up the butter, which prevents shrinkage.
