    Ingredients

    • 100g active sourdough starter (100% hydration)
    • 300g warm water (around 90-95°F / 32-35°C)
    • 150g cooked mashed potato (no skin, no butter/milk, cooled)
    • 500g strong bread flour (or all-purpose + 2 tbsp vital wheat gluten)
    • 10g fine sea salt

    Instructions

    Step 1

Prepare Levain: The night before baking, feed your sourdough starter to create an active levain; it should be bubbly and doubled in size within 8-12 hours.

    Step 2

Autolyse: In a large bowl, combine bread flour and 250g warm water, mixing until no dry spots remain, then cover and rest for 30-60 minutes.

    Step 3

Incorporate Add-ins: Add the active sourdough starter, cooled mashed potato, and the remaining 50g of water to the autolyzed dough, mixing thoroughly until fully incorporated.

    Step 4

Add Salt: Sprinkle salt over the dough and gently knead for 5-7 minutes until the salt is absorbed and elasticity begins to develop.

    Step 5

Bulk Fermentation: Cover the bowl and perform 4-5 sets of stretch and folds every 30-45 minutes over 3-4 hours, until the dough is puffy and has increased in volume by 30-50%.

    Step 6

Pre-shape: Gently turn the dough onto a lightly floured surface, form into a loose round, cover, and let rest for 20-30 minutes.

    Step 7

Final Shape: Lightly flour your surface, shape the dough into your desired loaf, and transfer it seam-side up into a floured banneton or proofing basket.

    Step 8

Cold Proof: Cover the banneton and refrigerate for 12-18 hours to develop flavor and ease scoring.

    Step 9

Preheat Oven: One hour before baking, place your Dutch oven with its lid into the oven and preheat to 475°F (245°C).

    Step 10

Score & Transfer: Carefully remove the hot Dutch oven, gently invert the cold dough into it, and score the top of the loaf with a sharp lame.

    Step 11

Bake Covered: Cover the Dutch oven and bake for 20 minutes.

    Step 12

Bake Uncovered: Remove the lid and continue baking for another 25-30 minutes, or until the crust is deep golden brown and the internal temperature reaches 200-210°F (93-99°C).

    Step 13

Cool Completely: Carefully remove the loaf to a wire rack and cool for at least 2-3 hours before slicing, which is essential for proper texture development.
