    Ingredients

    • 200g active sourdough starter (fed 4-12 hours prior, at peak or just past peak)
    • 240g all-purpose flour (plus extra for dusting)
    • 60g warm water (around 95-105°F / 35-40°C)
    • 30g olive oil or melted butter (or other fat like lard/tallow)
    • 5g fine sea salt

    Instructions

    Step 1

    Combine Wet Ingredients: In a large mixing bowl, whisk together the active sourdough starter, warm water, and olive oil (or melted butter) until well combined.

    Step 2

    Add Dry Ingredients: Gradually add the all-purpose flour and fine sea salt to the wet mixture, mixing with a spatula or your hands until a shaggy dough forms.

    Knead Briefly: Turn the dough out onto a lightly floured surface and knead for 2-3 minutes until it comes together into a smooth, cohesive ball. Avoid over-kneading to keep the tortillas tender.

    Step 4

    Rest the Dough: Place the dough ball back into the bowl, cover it with a damp cloth or plastic wrap, and let it rest at room temperature for at least 1 hour, up to 4 hours. This allows the gluten to relax and the sourdough to slightly ferment.

    Divide and Shape: After resting, divide the dough into 8-10 equal portions, each weighing approximately 50-60g. Roll each portion into a smooth, tight ball.

    Roll Out Tortillas: On a lightly floured surface, use a rolling pin to roll each dough ball into a thin, round tortilla, about 6-8 inches in diameter. Aim for uniform thickness for even cooking.

    Cook on Griddle: Heat a cast iron skillet or griddle over medium-high heat until hot. Cook each tortilla for 30-60 seconds per side, or until golden spots appear and the tortilla puffs slightly.

    Step 8

    Stack and Serve: As each tortilla finishes cooking, immediately transfer it to a plate and cover it with a clean kitchen towel. This steaming process keeps them soft and pliable.
