    • 200g sourdough starter (active or discard)
    • 240g all-purpose flour
    • 100g granulated sugar
    • 1 large egg
    • 80ml whole milk
    • 60g unsalted butter, melted and cooled
    • 1 tsp vanilla extract
    • 1 tbsp baking powder
    • 1/2 tsp baking soda
    • 1/4 tsp salt
    • 150g fresh or frozen blueberries
    • 1 tbsp turbinado sugar (optional, for topping)

    Instructions

    Step 1

    Preheat your oven to 190°C (375°F) and line a 12-cup muffin tin with paper liners.

    In a large bowl, whisk together the sourdough starter, granulated sugar, egg, milk, melted butter, and vanilla extract until well combined.

    In a separate medium bowl, combine the all-purpose flour, baking powder, baking soda, and salt, ensuring they are evenly distributed.

    Add the dry ingredients to the wet ingredients, mixing gently with a spatula until just combined; avoid overmixing to ensure a tender crumb.
