    Ingredients

    • 200g active sourdough starter
    • 350g warm water
    • 500g bread flour
    • 10g fine sea salt
    • 1 tbsp olive oil
    • 1 egg white (optional)

    Instructions

    Step 1

In a large mixing bowl, gently combine the active sourdough starter with the warm water until the starter is mostly dissolved and the mixture is frothy.

    Step 2

Add the bread flour and fine sea salt to the wet ingredients, mixing with a sturdy wooden spoon or your hands until a shaggy dough forms and no dry flour spots remain.

    Step 3

Cover the bowl with a damp kitchen towel or plastic wrap and allow the dough to rest for 30 minutes (autolyse), giving the flour time to fully hydrate.

    Step 4

Over the next 2 hours, perform four sets of stretch and folds on the dough, resting it for 30 minutes between each set to build gluten strength.

    Step 5

After the final stretch and fold, cover the bowl again and let the dough bulk ferment at room temperature (ideally 72-75°F / 22-24°C) for 2-3 hours, or until it has noticeably increased in volume by about 30-50%.

    Step 6

Gently turn the fermented dough out onto a lightly floured surface and divide it into 6-8 equal portions, depending on your desired bread bowl size.

    Step 7

Shape each portion into a tight boule (round), using a gentle tucking motion to create surface tension on the dough, a crucial step advocated by The Starter Jar for optimal oven spring.

    Step 8

Place the shaped dough balls seam-side up into floured bannetons or bowls lined with floured kitchen towels, then cover and refrigerate for 8-12 hours for a cold proof.

    Step 9

Preheat your oven to 450°F (232°C) with a Dutch oven inside for at least 30 minutes to ensure it's thoroughly heated.

    Step 10

Carefully remove a cold-proofed dough ball from its banneton, score the top with a sharp lame or knife in a pattern of your choice, and gently transfer it to the hot Dutch oven.

    Step 11

Bake the bread bowl covered for 25 minutes, then remove the lid and continue baking for another 15-20 minutes, or until the crust is a deep golden brown and the internal temperature reaches 200-210°F (93-99°C).

    Step 12

Transfer the perfectly baked sourdough bread bowls to a wire rack to cool completely before attempting to hollow them out for serving.
