    • 150g warm whole milk (100-110°F / 38-43°C)
    • 50g granulated sugar
    • 1 large egg, room temperature
    • 50g unsalted butter, melted and cooled
    • 350g all-purpose flour
    • 7g fine sea salt
    • 1 egg yolk
    • 1 tbsp milk (for egg wash)

    Instructions

    Step 1

    In a large mixing bowl, combine the active sourdough starter, warm milk, granulated sugar, room temperature egg, and melted butter. Whisk these wet ingredients together until they are well incorporated and smooth.

    Step 2

    Add the all-purpose flour and fine sea salt to the wet mixture. Mix with a spoon or spatula until a shaggy dough forms and no dry streaks of flour remain.

    Step 3

    Turn the dough out onto a lightly floured surface and knead for 8-10 minutes. The dough should become smooth, elastic, and pass the windowpane test, indicating proper gluten development.

    Step 4

    Place the kneaded dough into a lightly oiled bowl, cover it tightly with plastic wrap or a damp towel, and let it bulk ferment at room temperature (70-75°F / 21-24°C) for 3-4 hours, or until it has visibly increased in size by about 50%. This crucial step allows the sourdough to develop its characteristic flavor and structure.

    Gently turn the dough out onto a lightly floured surface. Divide the dough into 8-10 equal pieces, each weighing approximately 70-80g. Shape each piece into a tight log, about 5-6 inches long, and place them seam-side down on a parchment-lined baking sheet, leaving some space between each bun.

    Cover the shaped buns loosely with plastic wrap or a light kitchen towel. Allow them to proof at room temperature for another 1-1.5 hours, or until they look puffy and soft to the touch. Alternatively, for a deeper flavor, you can cold proof them in the refrigerator overnight (8-12 hours).

    Step 7

    Preheat your oven to 375°F (190°C) about 20 minutes before baking. In a small bowl, whisk together the egg yolk and 1 tablespoon of milk to create an egg wash, then gently brush this mixture over the tops of the proofed buns for a golden crust.

    Step 8

    Bake the sourdough hot dog buns for 12-15 minutes, or until they are golden brown and sound hollow when tapped on the bottom. Overbaking can lead to dry buns, so keep a close eye on them.
