In a large mixing bowl, whisk together the active sourdough starter and warm water until thoroughly combined and the starter is mostly dissolved.
Add the flour, salt, and olive oil to the wet mixture. Mix with a spatula or your hands until a shaggy dough forms and no dry streaks of flour remain.
Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until it becomes smooth, elastic, and passes the windowpane test.
Transfer the dough to a lightly oiled bowl, cover it, and allow it to bulk ferment at room temperature (72-75°F / 22-24°C) for 2-3 hours, performing 2-3 sets of stretch and folds during the first hour.
