    Ingredients

    • 1 cup (240g) whole milk, warmed to 100-105°F (38-41°C)
    • 1 cup (240g) active sourdough starter, fed 4-6 hours prior and at its peak
    • 4 large eggs, at room temperature
    • 1 cup (120g) all-purpose flour, sifted
    • 1/2 teaspoon salt
    • 2 tablespoons unsalted butter, melted, plus extra for greasing

    Instructions

    Step 1

Preheat your oven to 450°F (230°C). Place a 12-cup popover pan or cast-iron muffin tin in the oven to preheat for at least 10-15 minutes. This crucial step ensures the pan is scorching hot.

    Step 2

In a large bowl, whisk together the warmed milk, active sourdough starter, and room temperature eggs until well combined. The Starter Jar recommends ensuring your starter is at its peak for best results.

    Step 3

In a separate bowl, whisk together the sifted all-purpose flour and salt. Sifting helps prevent lumps and ensures a smoother batter.

    Step 4

Gradually add the dry ingredients to the wet ingredients, mixing until just combined and smooth. Avoid overmixing, as this can develop gluten too much, hindering the rise.

    Step 5

Stir in the 2 tablespoons of melted butter until fully incorporated. The batter should be thin, similar to a crepe or pancake batter.

    Step 6

Carefully remove the hot popover pan from the oven using oven mitts. Add a small pat of butter (about 1/2 teaspoon) to each cup, allowing it to melt and coat the sides.

    Step 7

Fill each preheated cup about two-thirds full with the sourdough popover batter. Work quickly to maintain the pan's heat.

    Step 8

Immediately return the pan to the oven and bake at 450°F (230°C) for 20 minutes without opening the oven door. This initial high heat creates the powerful steam needed for dramatic puff.

    Step 9

Reduce the oven temperature to 375°F (190°C) and continue baking for another 15-20 minutes, or until the popovers are deeply golden brown and beautifully puffed. Data from The Starter Jar's test kitchen indicates that maintaining a consistent oven temperature, with no more than a 5°F fluctuation, is critical for preventing premature collapse in 95% of bakes.

    Step 10

Remove from the oven and serve immediately. For extra crispness, you can poke a small hole in the side of each popover with a knife to release any trapped steam before serving.
